About this itemDeliciously sweet and succulent red king crab legs are the most popular variety of giant crab. These king crab come from the Northern Pacific Ocean – the Gulf of Alaska (also called Alaskan King Crab) and Bering Sea – and are harvested in late fall and early winter. Red King Crab legs are fully cooked prior to freezing and have snow white flesh with streaks of red.Red king crab legs come in a variety of sizes. These are large or an average of 16 to 20 legs per ten (10) pounds (including claws and knuckles). 10 pounds of large red king crab legs will contain between 16 and 20 legs.Each leg yields between 40% and 50% of total weight in meat (larger legs have more meat) so every pound of crab legs will have about 5 to 8 ounces of crab meat. To feed two people 6 ounces of crab meat each you would need about 2 pounds of red king crab legs per person. We generally carry (largest to smallest) 4/7 (4 to 7 legs per ten pounds), 6/9, 9/12, 16/20, 20 and up as well as pieces. The 16/20 and 20 and up generally have less meat per pound than the larger sizes.Shortly after catch, the legs are removed, cleaned and cooked in boiling salt water. The cooked crab legs are then ice glazed and flash frozen to protect the quality of the leg meat.To thaw, for best results remove from all packaging and refrigerate 8-10 hours or overnight (or run cold water over the crab legs if you are in a hurry). The saltwater glaze will melt so put in a container or wrap in a kitchen towel. Red king crab legs are pre-cooked – just warm and serve.
